GREEN BEAN SALAD

Salt and Black pepper3/4 Pound of Green Beans2 Tbsp Lemon juice1 Tbsp Vinegar1 Garlic Clove, minced3 Tablespoons extra virgin olive oil4 Pints of cherry Tomatoes2 Cups of cooked chickpeas cooled and drained4 Ounces of Feta, crumbled2-3 Tbsp chopped DillPinch of dried Oregano
DIRECTIONS
Boil water iin a medium saucepan over high heat. Add 1 tablespoon of salt and cook the green beans in the water until crisp.Transfer green beans into a bowl of cold water, drain, then dryMake the dressing: In a bowl, put lemon juice, vinegar, garlic, salt, and black pepper to taste, then whisk in olive oilMake the salad: Add tomatoes, green beans, and chickpeas to a salad bowl. Add dressing then toss to coat. Add Feta and toss again, let marinateSprinkle oregano and dill, serve, and enjoy!
